In the summer months, our eating schedules are a little more crazed and we’re lucky enough to eat at my parents on many nights. But now that school is back on, I’m back into meal planning again.
Taking a page from Rubyellen’s blog on family meals, I’ve decided to share some of our family style meals here.
Truthfully, I do love to cook. If I didn’t have to work, I think I would spend more time planning and making meals. Partway through the last year, I discovered meal planning and during the school year, I would be lost without it. Before, I used to be driving to pick up K from school, thinking about what I was going to make for dinner when I got home. Now, every Sunday, I write out what I’m making for the week and go grocery shopping with our family’s weekly menu in hand. I can’t tell you how much better this is!
So, our week 1 (first week of school) the menu is:
Tuesday (Monday was a holiday): Herbed Salmon, Bacon Wrapped Asparagus & Rosemary Foccacia
Wednesday: Roast Chicken with Sweet & White Potatoes, Carrots, Onions & Rosemary Foccacia (from Tuesday)
Thursday: Whole Foods (K loves the buffet bar there so it’s a night out for the two of us since Hubby has a work function)
Friday: Grilled Steaks with Balsamic Glazed Mushrooms
So where do these meal ideas come from, you’re probably asking? Most of the time, I have a go-to list of “recipes in my head” that I rotate between (do any of you do the same?) Other times, I turn to one of my favourite cookbooks or find something online.
